October 9-16, 2022 - Tilapia Piccata, Baked Salad, Snacks Dinner

Sausage, egg, and cheese croissant

From Common Ground. Pretty good! Got this and a vanilla chai while I was waiting for the post office to open. A perfect little fall morning.

Grocery store sushi

On Monday I did one of my favorite things, which is go to a bunch of stores and take my time doing errands real luxuriously. Got sushi from Wegmans.

Tilapia Piccata

Yogurt

We got plain yogurt but I don't really like that so I've been trying to find ways to like it. This time, with honey and pumpkin spice Michelle's granola. Great granola, but did not hide the yogurt taste. Yesterday, I defrosted some frozen cherries we've had forever and haven't been using and put those in the yogurt and that was pretty good. I'm excited to finally be using the frozen fruits. Janty went through a phase where he was making smoothies a lot but he stopped and so there's been a bunch just hanging out in the freezer.

Berries and cream

Blueberry, raspberry, whipped cream, cinnamon. Last week I had friends for dinner and Rebecca brought mac and cheese so I made roasted veggies and this for dessert. Great combo.

Baked salad

Used this recipe I saw on instagram: https://justinesnacks.com/baked-kale-salad-with-crispy-quinoa/ but I added roasted veg- sweet potatoes, carrots, onion, with olive oil, salt, pepper, garlic powder, onion powder, Italian seasoning, veggie bouillon. For the quinoa, I followed the instructions but I didn't have chili oil so I mixed olive oil, some veggie bouillon, and some chili crisp (pretty dried out, I wonder if I used the oil part for something else...) and used that as the seasoning. Tasted great! Not as crispy as it looked on instagram, but I wonder if it was still kind of wet from cooking when I put it in the oven. I might try rebaking the leftovers to see if it crisps up good. Overall, I liked this salad, but it tasted like a candle to me...I think it was the combo of the sweet potato and sage in the dressing. Tasted better as leftovers to me. If I had just added some broth to the leftovers, it would've made a delicious soup I bet.

Jail Visit Dinner

I had to go to Pennsylvania for a jail visit and it's far away so I spent the night. When I got there I was tired of driving and nothing sounded appetizing so I went to the grocery store to see if I could find something delicious. Nothing sounded good, so I got this buffalo chicken wrap and it was bad!! I didn't even finish one. The wrap was soggy and I didn't realize until a couple bites in that it had blue cheese. Very sad. Luckily I wasn't very hungry so I ate a bunch of this candy popcorn and that was my dinner.

Jail Visit Breakfast

Doesn't this look pretty sad...it tasted fine. There was complimentary breakfast at the hotel and I was instructed to eat that to save money. The strategy was just to eat a lot since I thought I'd be at jail for a super long time without food. I put butter and jelly on the bread and it tasted pretty ok. The reason it's not hardly toasted is because the toaster was taking too long.

Wendy's

After jail I was dreaming of dipping fries in a frosty. I have been thinking about that all week, actually. I stopped at Wendys and got small fries, 4 piece chicken, and a small frosty and it cost less than $5 total!! Amazing. I ended up not dipping many of the fries in the frosty because they were not structurally strong enough for it. This was a very satisfying meal.

Snacks Dinner

A pepper, some radishes, crackers, and a can of clams. Delicious. A perfect meal for solo movie night watching Rosaline.

Also had these snacks. It's nice to get a whole bunch of stuff so you can eat a little of everything and then there's still leftovers the next day. I was also pretty full from dinner so I didn't eat as much as I was expecting to of these things- lucky for today me!

I knew I was behind on blogs but who knew I was so behind you’ve been doing fish Mondays for HOW long and I had no idea?? This one time a trivia question was “most famous haribo forest friend shape” and I confidently answered frog A LOT OF TIMES before someone was like “maybe bear?” Which was hilarious and embarrassing to me
