I had a very relaxing weekend!!
Friday I had chicken tetrazzini that I made earlier in the week loosely following this recipe: https://bellyfull.net/chicken-tetrazzini-recipe/
I used an extra big can of cream of mushroom soup and no cream of chicken and did not put the sour cream and accidentally put way more garlic powder than I meant to. Turned out great! Janty and I went to the movies and saw the new Meg Ryan and then we went to sonic and I got pickle fries and a Dr. Pepper.
Saturday for lunch I had eggs and spam and cooked up the entire can so I could just use the spam in other stuff during the week.
For dinner, I started with this Big Salad

In order of how I built it: romaine, salt and pepper, little sweetie peppers, some cucumber, one red pearl onion, one colossal olive, olive juice, cherry tomatoes, marinated artichokes and juice, feta, olive oil, more pepper, Italian seasoning. Delicious!! I made almost the same salad to pack for lunch Monday, but without tomatoes and with soppressata

Charcuterie Dinner

Hit the under-$5 cheese bin at Harris Teeter and got havarti dill, brie, and smoked cheddar. Ate with three-cheese semolina, colossal olives, soppressata, huge grapes. Cherry coke with rum and maraschino cherries in the glass. Ate while I watched My Big Fat Greek Wedding 3.
Apple Crumble

Today (Sunday) I had a bunch of bread and eggs and spam for breakfast/lunch and grocery store sushi for dinner. I had a bunch of apples leftover from fall fest so I made apple crumle. Followed this recipe https://www.momontimeout.com/apple-crumble-recipe/
It was super easy and didn't call for anything I didn't already have. Also, I didn't peel the apples bc it said I didn't have to. Turned out real good. It looks dry in this photo but it was juice once I cut into it.
