May 8-May 15, 2022 - Kale, Cont.

I finished the kale!!! Here is how I did it, plus some other stuff:

Nachos

Ok, this isn't kale, so kind of starting on a misleading foot, but I really do prefer to put the foods in chronological order even if it doesn't make thematic sense. On this night I really wanted nachos so I went to Walgreens for chips and cheese but they had no tortilla chips. Hardly any chips at all!! So what I did was I cut up some tortillas we had from the Salvadoran store and baked 'em into chips. Then put cheese and chicken (the same chicken from the last post we're trying to finish) and jalapenos on half. Proud of myself for persevering.

Savory Oats

Oatmeal, topped with kale and a boiled egg that didn't peel very well. I think I put garlic and onion powder on the kale, just pepper on the egg. Tasted good! I mixed it all together to eat.

Salad

This looks like hardly any kale, but is actually a ton of kale that I wilted in the pan to 1) make it fit on the plate better and 2) help my stomach get a head start on digestion because otherwise I can really feel it working so hard. I don't remember what I put on the kale this day, but had tomatoes, radishes, mozzarella balls, basil. Some sakura radishes can you see?

I mixed this up really good to eat it, too, and it was very satisfying.

Portugese Sausage & Eggs

Cooked up the Portugese sausage Mom bought from Ellie's school sale, then in the grease cooked the egg and the kale. Put a lil everything but the bagel seasoning.

Chicken Casserole

As I mentioned earlier, we are still working on eating the 16 lbs of chicken that Janty shredded (not sure it was actually 16 lbs but maybe it was 16 chicken breasts? The number 16 is sounding familiar to me). By midweek, I had just about a couple handfuls of kale left, so had the bright idea of making Chrissy Teigen's tuna casserole recipe but with chicken instead. Maybe Janty had this idea....it was a good idea whoever had it. Used a bunch of chicken and this killed the kale! And as of today, we have officially killed the casserole!

At Sam and Alex's wedding!!!! Man, pretty good chicken tenders. Wish I had some more now.

Bang Bang Cauliflower Tacos

Went to Barcocina with Montana and got the cauliflower tacos. Very yummy and crispy. And a blackberry mezcal drink I don't remember the name of.
