May 28 - Large Cucumber

Breakfast: Breakfast Tacos

This looks like enough eggs to feed an army, but it's just 2 and the tortillas are small. Refried beans, shredded cheese.

Snack: Cucumber

With French onion dip

It was huge

Lunch: Sandwich

Toasted sunflower seed bread, pepperjack cheese, mustard, pickle. I bought the silliest half loaf of sunflower seed bread the other day so keep on having to eat tiny sandwiches.

Dinner: Chicken Feast

Used this chicken thighs recipe: https://cafedelites.com/honey-soy-baked-chicken-thighs/. It tastes good but I think in the future I will just stick to Mom's shoyu chicken recipe because it's a similar vibe and less fuss. Also I used red onion instead of green because I had some in the fridge. Leftover mashed potatoes from last week that I made with dill veggie dip instead of plain sour cream/milk. Spring mix, torn up. Poured the marinade from the chicken over everything, put some sesame seeds on top.


For dessert: hot chocolate. Now I'm about to have a whiskey ginger.

Mom had never shared her shoyu chicken recipe with me! I have made someone else’s shoyu chicken and it wasn’t good. All your food looks good. Dig the mini sando.
