Breakfast: Egg Salad

Did you know I love breakfast salads sometimes? This one has spring mix, 2 eggs, party medley tomatoes, everything but the bagel seasoning (no dressing besides the runnier parts of the egg yolks). Lately I'm bad at peeling eggs. Weird, right? Oh well.

Lunch:

Kikkoman scallop just-add-egg soup. One pack makes 3 servings!

Dinner: Chicken & Veg Feast

Chicken breast (baked 400 for 24 min, Uncle Gregg's salt and olive oil), rice with furikake, plain steamed broccoli, spring mix torn into small pieces with lemon and sesame seeds. The pink flower bowl has kewpie mayo, shoyu, and some mirin for dipping my broccoli and spring mix in. Blackberry cider out of my special cup. This was a meal that made me feel like wow I can rule the world.


Also today I got an iced matcha latte from doobys, light sweet with housemade vanilla syrup. A perfect afternoon treat.
