March 27, 2023 - Omelet, Salad, Asparagus Artichoke Chicken

Breakfast: Omelet

Yesterday I went to body pump and aftewards I wanted a western omelet sooooo bad so we finally went to Kay's Place, a little restaurant like one block away I have been wanting to try for months!! This hit the spot but I couldn't finish so I saved the leftovers and had them for breakfast this morning. Saving an omelet for the next day! Who'da thunk but it is the smartest thing I've done in a long time. We did 2 miles at swimming this am so I was really hungry and happy I had this.
Lunch: Salad

Spring mix, artichoke, tomatoes, cucumbers, cottage cheese, salt, pepper. Artichokes are so good to have around for salads. I also had lucky charms this afternoon. You know, I am not that into the way the marshmallows of lucky charms feel on your teeth when you crunch them.
Dinner: Asparagus Artichoke Chicken

I had some very gorgeous, thick asparagus I got at Moms last week that I was going to be so sad if it went bad so I abandoned fish Monday to focus on the asparagus (also because the only fish we have rn is tuna and I didn't feel like figuring that out today). I typed in "asparagus artichoke chicken" on google and ended up finding this recipe I had all the ingredients for https://blog.myfitnesspal.com/chicken-asparagus-and-artichoke-skillet/
I didn't realize it was myfitnesspal until after I was halfway done cooking. Put it on top of fettuccine with some pesto I found in the fridge. A quick and easy, tasty meal with a lottt of leftovers.
