June 13-18, 2022 - Parsley

In my last post I said I wanted to try to recreate the Nando's macho peas at home. To do that, I bought parsley because I thought we would need more than what we have on our little parsley plant. I was wrong though so I have been trying to use up the parsley all week.


Steak Salad

Bed of spinach and arugula, ring of radishes, leftover corn on the cob, a tomato, steak. Made a dressing out of parsley, mint, olive oil, salt, chili flakes, lemon juice. Mmmmm. Refreshing, perfect, summertime.

Peas & Cod

I like them but it's not the same consistency as the Nando's one. I think next time I might try doing the mashing in a food processor and putting the parsley and mint in there with it.

A very delish and satisfying dinner. I think cod baked in about 12 min.

Sponge Cake

We bought a new rice cooker and the instructions came with a recipe for sponge cake you cook in the rice cooker. Janty made that and I made whipped cream and we ate it with peaches. I think I like the cake better without whipped cream. Pretty vanilla-y.

Salad

Arugula and spinach, radishes, leftover peas. I had a little bit of tuna left over from a lunch I made and a tiny bit of cod left from the night before so I went ahead and put both. More parsley dressing on top. I was worried the tuna and cod together would be weird but nope, this was a great salad.

Risotto

On Wednesday night I went to Arlington to hang out with Hannah for a couple days. We made a hello fresh recipe for pork pepper risotto. I had never cooked a hello fresh package before but pretty fun not having to measure stuff. This was very delish and easy. I liked the texture because it was kind of like how I make my steel cut oats. Not too mushy.

Oatmeal

Since I was at Hannah's house I woke up at the same time I normally would but since I didn't have all my normal morning chores to do I had a lot of time before I needed to start work. I walked to northside social and got this steel cut oatmeal. I liked it but there was some almond butter in there that didn't fully blend right and I got a couple of weird mouthfuls. But overall, tasty breakfast. I also had part of it for lunch with leftover risotto. Not together, like, I had some oatmeal and then a couple minutes later had risotto.

Olive Garden Carbonara

We went shopping for honeymoon clothes and then went to Olive Garden and had a friendly waiter named Melvin. I got the chicken and shrimp carbonara. I ate too much salad and breadsticks so didn't eat very much of this when it came. Very very very buttery. I think it tastes better as leftovers than it did that night.

Another Salad

Back at home, so back to variations on the same salad. Arugula, spinach, peas, parsley dressing, mozzarella slices. Olive oil, balsamic, salt, pepper. This salad was so good but made me want a chocolate chip cookie soooo bad. I didn't have one and had a meeting after lunch so I settled for tea.

Oysters

Janty and I went to the Mt Royal Soaps night market with some of his improv friends. We got a dozen oysters from the local oyster. Funny thing to get in a walk-around situation, but I had fun eating them.

Chocolate Chip Cookie

After the market we went to R House and got more food. I got a crispy bbq cauliflower bowl from Stem. It was so good. I love crispy cauliflower. I do call it broccoli every single time I try to talk about it/even just now wrote broccoli at first. But anyway. I also bought this chocolate chip cookie that was soooo good. Hearty. Lots of chocolate, and had some coconut. Also oatmeal I think? I wish I had another one now.
