July 19, 2022 - Potato Casserole

Here's what I ate yesterday. I wasn't on my normal routine and don't remember all the snacks/breakfast, but there were some notable things.
Lunch/Snack: Ham & Cheese

From Cafe Los Suenos. Soo good. Man, I love a baked ham and cheese food. Also doesn't my iced latte look so dark? Maybe a little less so here because it got a little mixed walking home but I was like whoa when they first gave me it.
Dinner: Potato Casserole and Shrimp

Look at this. I was going to make twice-baked potatoes and was all excited about it but I kind of messed up doing the scooping and then I thought, ah-ha, I will just microwave all the potatoes and make this a casserole instead. So, as I said, microwaved the potatoes using the "potato" button on the microwave. I never used to use the preset buttons because I did not trust them but Janty always using them so I have started and have been pleasantly surprised. Anyway, micro'd the potatoes, scooped out the insides, mixed with a small tub of sour cream , butter, grated cheddar, broccoli (blanched first), a little bit of milk. Mashed it up, put it in a casserole dish, topped with extra cheese, broiled while shrimp cooked. Oh, and for spices I did salt, pepper, garlic and onion powder...I think a little bit of paprika..?

Ate it with shrimps. I marinated the shrimps in lemon juice, olive oil, garlic and onion powders, paprika. I put them on skewers thinking that might make it easier to cook because I could just flip 'em all at once but it seemed like they weren't cooking evenly so I took them off and just cooked them regular. Great dinner. And I timed everything well.
Ice Cream

Good old-fashioned mint choco chip.
And for after-swim snack I had cocoa puffs. A little twist on my usual chocolate milk.



All I want to eat for the rest of my life is this potato casserole and mint choco ice cream ☠️
