PBB Toast

I made bread, Janty made peanut butter. Put em together, added banana, cinnamon, and honey. Delish. The peanut butter is pretty liquidy so I bet would be good to use in sauces, smoothies, etc.


Boring Salad

Had this for lunch to use up some greens one day when I didn't have that much time and wasn't feeling in the mood for anything. It's greens, a little bit of grated carrot, cherry tomatoes, tuna, everything but the bagel seasoning, olive oil. Tasted fine but not that exciting.

Chili

Janty made this and we've been eating it all week. He bought a freaky amount of ground turkey so made a lottt of chili with it. He put cocoa powder and cinnamon in there. Funny, huh? My dad went through a little phase where he was putting cinnamon in his chili all the time, but he was putting a lot of it. This wasn't so much. I couldn't really tell it was in there. Tastes good.

Shrimp Tacos with Cilantro Lime Sauce

This was a meal to use up a bunch of cilantro we had in the fridge. I used this recipe to make a cilantro lime sauce: https://www.acouplecooks.com/cilantro-lime-dressing/

It was good and super fast/easy/didn't need a lot of dishes to make so I liked it. Also it was perfect because I had one lime left over from when I bought two limes for I don't remember what. The shrimps I did in a pan with idk some random spices I think paprika, chili powder, cumin? Didn't use a recipe. They were just fine, but were good with the sauce. Put fresh cilantro on top too because I still had a little extra. The cup is pineapple juice with coconut rum. This was a very quick and easy meal to make. It was like 15 minutes for the whole thing, maybe less. Made me feel like a skilled mother.

Tuna and Crackers

Lately I haven't really been knowing what I want to eat for lunch, I think because it's been cold but I haven't been in the mood to cook really. For this, I took the rest of the can of tuna from the salad I made earlier in the week (above), mixed it up with some of the leftover cilantro lime sauce from the shrimps. That was a pretty smart move of me, I think. Had with ritz crackers and broccoli and some carrots. I cut up the broccoli to make us more likely to eat it before it goes bad because we keep making other stuff instead of broccoli. It helps having it cut up, though. I have been munching on it a lot more than I would otherwise. This was a pretty good and satisfying lunch.

Mostly-Vegan Chocolate Chip Cookies

Janty made these because he had friends over on Friday and one of them's boyfriend is vegan. Turns out these have milk chocolate so oopsie not 100% vegan but that guy is not strict vegan anyway so it was fine. He used brave tart's recipe. I like 'em. They taste coconutty and salty. Kind of harder/thicker than I usually like my choco chip cookies but delish, and also that keeps me from eating one million at a time so they are lasting a long time, which is nice.

Party spread

It was only 4 people so this was a lot of food. Also there was a platter of shrimp that was in the fridge when I took the picture. It can be so fun to have a platter of shrimp around. Here, there's bread, pita bread, pomegranate, rosemary marcona almonds, cheddar cheese. Put the last of the cilantro lime sauce out to eat with the bread (good and smart imo). Bean dip, hummus, hint of lime and salt and vinegar chips. My favorite was the almonds. I've never had marcona almonds before. They're buttery and nice and taste good with the rosemary.

Tamago Sando

Finally got the tamago sando from cafe dear leon. Waited in line for a long time on a very cold morning and kind of a bummer is they're only open for pickup (can't eat in the cafe) so I went with a new friend and we waited in line and then went to our own houses to eat after lots of build-up. It was way too cold to eat outside, though. Tasted so good. The bread does a nice job of not getting soggy. They had a smoked salmon focaccia and a salami diavolo that looked sooo good, too. Might get one of those next time.

Broccoli Omelet

I woke up this morning and said "wanna make me a broccoli scramble?" to Janty and he said "sure." Wow I love it when that happens. This was different from my vision but delicious. Broccoli, cheddar, eggs, green onion on top. Also put hot sauce after I took the pic.

I can’t wait to come to your parties someday. You really know how to do a spread! I love Marcona almonds! Mom sometimes magically has them around. She and grandma seem to always have Trader Joe’s items around, for two ladies who live on a TJ-less island…
