January 3, 2022 - Salmon, regular stuff...

I am doing the devil's schedule this week (filing deadline first day back at work, trial second day back at work, trial next week) so am trying to keep myself from getting sick so I can take time off next week and do fun stuff. So here is what I ate to support that goal


Breakfast: Egg, Bread

I'm still jetlagged but trying my hardest to knock it off. Today I woke up at 4:50 mostly without an alarm, exercised, went for a walk, took the trash out, showered, made this breakfast, sat down to do some work. I was doing a great job until 7:15 when I had to lay down and take a little nap. Oh well. Breakfast was good. This batch of eggs has been double yolks almost every single time. Toast is caraway rye with strawberry jelly. Also I have been trying to not put sugar in my tea as the default and am planning to experiment with only drinking one cup of tea every day, two max but that did not happen today due to I needed to be awake to work and couldn't take another nap.

Lunch: Salad

Spanish and kale chopped greens mix, some cucumber, two radishes, some crumbled brined feta, a little dollop of roasted pine nut hummus, salt, olive oil. Pretty good. I didn't finish so I guess I'll have some with breakfast tomorrow. It's not very much left over. While I was making this I kept saying "vitamins and minerals vitamins and minerals" to myself like Nick Miller saying "thoughts and notions" in the swuite episode

Snack: Chia pudding

For chia pudding, I did 1/4 cup chia seeds, 1 cup oat milk, vanilla, maple syrup. I made it yesterday with the plan of eating it for breakfast but then I was too hungry so saved this for snack. In the morning I put a little handful of frozen blueberries in the fridge so they would be thawed for snack time. Pretty good little scheme of me.

Dinner: Salmon and Brussels

Janty made. Delicious. I was really hungry from working hard and also what you can't tell from this post is that almost all the eating happened before normal lunch time actually because I had lots of meetings and follow-up tasks in the afternoon so ate before.

Dessert

Ok for dessert I actually had a piece of that lemon coffee cake from yesterday and was originally thinking I would have ice cream as second dessert but now I'm pretty full and kind of am so tired I don't feel good so thinking maybe I won't have ice cream after all.

I do have the pic though because I ate this after I blogged yesterday. Here it is:

I love peppermint candy ice cream!! This one is not as good as the bluebell one but it is still so good and feels like I am on my grandparents' couch in Austin at Christmas time. This is called...pepper's ice cream? pat's? mmmm idk... but I got it at wegmans
