February 20, 2023 - Avocado toast, Pastax2

Today was really a reminder of "wow I could have such a great life if I didn't have to work."

I am going to post the first two pics out of order for thumbnail purposes. But to explain: I was planning to sleep in and go to 9am body pump but at 4:30 I couldn't sleep and was tossing and turning and disrupting Gus and Janty so I decided to just get up and go to swim practice. I had half a banana before, then afterwards I had the rest of the banana with peanut butter and granola. Then, I went to body pump because I felt bad about cancelling so close to class time and then I made this delicious breakfast seen below.


Avocado toast

I bought two avocados yesterday and I never really buy avocados but man it is so fun to have them. I ate one yesterday on toasts and today I used half on toast, saved the other half for lunch salad. This was so good. Also the iced latte is from cafe los suenos and I bought it in between swimming and body pump and put a little chocolate syrup in there so it was kind of like having a chocolate milk after-workout recovery drink but with coffee too. I only drank about half before body pump and finished the rest with breakfast, as you can see.

Pre-breakfast: Banana

This looks very ugly but it was very satisfying and kept me energized.

Lunch: Salad and Pasta

This salad was soooo good. The greens are the organic girl protein greens mix. Then, 3 campari tomatoes, sliced (except one I cut in quarters before remembering I love sliced). Half an avocado, mozzarella balls, some canned artichoke from a can I opened before Sweden (kept them in a tupperware in the fridge), salt, pepper, olive oil from the mozzarella, cranberry vinaigrette because it's the only one I could find. Delicious!

And then I had a little pasta just for fun.

Dinner: More pasta

My original plan for dinner was to make spaghetti with cod roe sauce packet and clams because it is fish Monday, but then I figured we have a lot of the other pasta so might as well just do that and save the spaghetti for another night. I added some kale to mine partly to make it feel different from lunch and partly to help fill me up. I did try to add a lot of veggies to the sauce but the kale helped.


For dessert I had some Ritter Sport butter biscuit chocolate Janty brought home from his layover in Frankfurt :)
