February 17, 2022 - Toast Buffet

I still haven't gone to the grocery store. Here's the situation: there's a "check tire pressure" light in my car and I know how to do that and I even know how to fix it but I just don't want to. Also I keep on having to drive to Arlington so now my lower back is sore from sitting. Also I don't want to go when it's crowded or when it's rush hour or when it's dark. Also I can't find my big tote and I have to buy a lot of heavy staple items and I don't want to pay for a bunch of bags. Also I don't feel like walking from my car with all those groceries. So. A lot of obstacles over here. I might go tomorrow morning though before work. Idk we'll see.

In the meantime, I still have plenty to eat. I had a fried egg on toast for breakfast. Finished the spaetzle and meat for lunch. Killed the tofu for after-work snack.

For dinner: Toast Buffet

We had a whole bunch of cherry tomatoes that were starting to turn so I was brainstorming what to do with 'em. Almost made roasted tomato soup but I wasn't sure we had enough tomatoes for that and I'm not that into tomato soup. Instead, I just chopped them up and that was the inspiration for this meal. Tomatoes, olive oil, basil, salt, balsamic. Grilled halloumi. Janty bought halloumi a while ago and didn't have a plan for it and idk how long halloumi lasts for but I was going to be mad if we let it go bad so it seemed like a good night to grill it up on the grill side of our griddle. Did that, chopped up the end of our arugula & spinach mix, toasted our last little pieces of bread. Ate everything in various combos- had a toast with a little bit of everything, had some of the salad just with the tomatoes, had some halloumi plain...the world was my oyster. Also: clementine Italian soda delish

For dessert I baked up some of the cookie dough balls I made the other day. Waiting on them to cool rn but they're definitely ready by now so gonna go eat 'em
