I had pbj toast for breakfast and leftover spaetzle for lunch. For dinner, this:

I was supposed to go to the grocery store after work but I didn't feel like it, and I remembered I had some tofu in the freezer so there we have it. Used this recipe for the tofu: https://www.tablefortwoblog.com/pan-fried-sesame-garlic-tofu/
It worked better than when I've pan-fried tofu in the past. I think it was that the tofu bits were nice and small, and I dusted cornstarch over top, instead of dunking the tofu in a bowl of cornstarch like I've done before.
We had some cucumber that was starting to get moldy so I tossed the moldy bits and pickled the rest. Used this recipe: https://onolicioushawaii.com/japanese-pickled-cucumbers/
The rice I made the other day. Also I had clementine Italian soda for dessert.
