April 8, 2021 - Arugula and Oatmeal

I had 2 things I wanted to eat/use up: oatmeal and arugula. For breakfast, I cooked oatmeal using this recipe as a guide:
I did 2 cups water, 1 cup oat milk, 1 cup oats, cooked about 20 minutes
I ate it with a little maple syrup and cinnamon for breakfast but didn't take any pics. I saved the rest in the fridge.
For lunch: Grilled Cheese and Salad Mountain

Sour dough from Harris Teeter, cheddar cheese slices, delish. Ate it while I watched Daughter from Another Mother in preparation for my Spanish interview

Finished with a big pile of greens. Arugula, spinach, olive oil, half a lemon's juice, red pepper flakes, kosher salt
Dinner: Savory Oats

I've been wanting to try savory oatmeal ever since Michelle came to visit and said that's how she eats it. I used my leftover breakfast oatmeal, put lots of parm, heated in micro for about 1.5min. While the oatmeal was in the microwave, I wilted some spinach on the stove (didn't put anything on it) and fried an egg. Added a bunch of black pepper to the oatmeal and plated everything up. Let some of the extra butter from egg-frying drip into the oatmeal. Stirred it all up so the egg goop got all over it. Delish.
