Lunch: This Sandwich

Sauteed chickpeas in olive oil, turmeric, and paprika. On rosemary olive oil bread, smashed the chickpeas in, spinach, arugula, dill veggie spread. Pretty good! I will probably eat this as a salad tomorrow.

After-Final Drink: Peach Margarita

Pretty good. Really strong. Drank it while I cooked dinner and watched the nanny

Dinner: Chicken Enchiladas

My computer used to belong to my Grandma Jean so every once in a while I find something she saved. This was a file called Chicken_Enchallads, from Austin High. Baked chicken breasts (seasoned w olive oil & Hawaiian salt, 400 for abt 24 min), made sauce of frozen spinach, jalapenos, sour cream, onion. Mixed that with the chicken, spread some on the bottom of the dish, rolled chicken mix into tortillas, spread leftover chicken around the empty spots, poured the rest of the sauce on top, covered in cheese, baked at 350 for a while. Delish!


Some other things I ate:

Tillamook coffee almond fudge ice cream (straight out of the tub while I waited for my exam to start)

The end of my broccoli ginger soup!!! 20 days I've been eating that

Lots of Ghirardelli chocolate chips

Some pepper jack cheese slices throughout the day
